Fried Eggplant, the only way I’ll eat my eggplant :)
First slice one eggplant (hamburger style slicing), make the slices however thick you want, I usually go about 1/2 inch slices or slightly thinner. Salt both sides of the slices and let sit while you prepare the batter and breading.
Mixing the breading:
- 2 teaspoons salt
- 1 cup flour
- 1 teaspoon baking powder
- 2 teaspoons Italian seasoning*
- 1 teaspoon onion powder
- dash ground cayenne pepper
- 1/4 teaspoon garlic powder
Then mix the “egg” batter:
- 2 eggs out of the Ener-g Egg Replacer box
Now get the pan ready:
- lightly oil the pan, you’ll need to re-oil between every or every-other batch
To cook:
- take the slice, dip it in the “egg” mixture to coat it fully
- move it to the breading and fully cover the slice in breading
- slap it in the pan and fry until golden browned! (cook a couple at a time depending on how big your pan is)
- Take off the pan and let cool on a paper-towel covered place (to soak up extra oil)
- You might want to keep the done slices in a warm oven until all are ready to serve
