veganadventures:

Fried Eggplant, the only way I’ll eat my eggplant :)
First slice one eggplant (hamburger style slicing), make the slices however thick you want, I usually go about 1/2 inch slices or slightly thinner.  Salt both sides of the slices and let sit while you prepare the batter and breading.
Mixing the breading:
2 teaspoons salt
1 cup flour
1 teaspoon baking powder
2 teaspoons Italian seasoning* 
1 teaspoon onion powder
dash ground cayenne pepper
1/4 teaspoon garlic powder
Then mix the “egg” batter:
2 eggs out of the Ener-g  Egg Replacer box
Now get the pan ready:
lightly oil the pan, you’ll need to re-oil between every or every-other batch
To cook:
take the slice, dip it in the “egg” mixture to coat it fully
move it to the breading and fully cover the slice in breading
slap it in the pan and fry until golden browned! (cook a couple at a time depending on how big your pan is)
Take off the pan and let cool on a paper-towel covered place (to soak up extra oil)
You might want to keep the done slices in a warm oven until all are ready to serve
